八條壽司原是位在鶯歌街上的路邊攤，走的是親民但 CP 質高的日本料理，沒想到開業後客戶源源不絕，一個介紹一個 ，因無法容納大排長龍的用餐客戶 ，進而開立第一家旗艦店「八條壽司三峽店」；又因大受客戶歡迎，店內面積更是繼續況大，每到用餐時間客戶絡繹不絕，紛紛湧入店內。
老闆更是在 2016 年 4 月份開了第 2 家「八條壽司鶯歌店」，店內走的是日本沖繩風，讓前來用餐客戶感受到濃濃的沖繩氣氛，彷彿置身在沖繩島上享用平價但高 CP 值的美食。
