淺田屋老闆阿通師，秉持著口味創新食材新鮮、價位合理，以客為尊的服務理念，來獲得顧客的信任，使他們成為終生顧客。淺田屋 為了常使來店消費的客人吃到不一樣的菜色，所以老闆阿通師常常會尋找一些新鮮食材或日本空運直接來台高檔新鮮食材來做成料理。以熊本的生蠔、青森新鮮海苔或鰝魚做成的生魚片、美味甘甜牡丹蝦 (蝦頭還可做成另一道的料理，如煮湯、鹽烤、炸的都可以) 。日本碟魚脂邊肉做成燻烤握壽司、日本鱒鮭腹的燻烤握壽司、鮭魚燻烤握壽司。
日本最項級的馬糞海膽等等皆是用來呈現給客人的上等食材。
