花蓮純淨的美景與質樸的民風，使原本住在台北的老闆一家，一眼就愛上了這裡，乾脆舉家搬遷到花蓮定居下來。在因緣際會之下，有了何不來釀醋的這個念頭。因此，結合十多年前與義大利籍老廚師學習的釀醋工法，與汲取自海平面1000公尺以上的大武山純淨泉水，使得愛吃醋純天然手工坊就此在花蓮誕生。
